No Waste, Just Taste

How about a culinary dinner in an ancient 19th century environment prepared with only leftover ingredients? On April 5, it happens and the premiere of No Waste, Just Taste will be a new concept in Vår Gård’s sustainability work. At the initiative of the kitchen’s creative chefs, a “no waste dinner” is created which encourages and inspires to reduce food waste. An educational and surprising evening for curious food lovers.

Dinner is served in beautiful Villa Skärtofta which is one of Saltsjöbadens first century-old villas and an important part of Vår Gård’s activities and history. Here, modern meetings are held in the charming tower rooms, and in the grand salon, colleagues, parties and wedding guests gather for various events. This Friday night, however, it is time for a different dining experience where guests can enjoy a well-prepared dinner based on raw materials from local producers who contribute their surplus. The food is served in five batches and the menu is presented at the table by the chefs themselves. They tell how they think about sustainable cooking and are happy to give smart tips in everyday life.

– In the kitchen we work daily to create new and creative dishes with the raw materials we have in season and the challenge lies in taking advantage of all the parts to avoid waste. For example, it may be the end of an onion, a crooked carrot or grout from fennel. We want to show and share with us what we as a restaurant kitchen are passionate about and maybe even manage to inspire the guest in everyday life, says Karin Sundgren, chef at Vår Gård and winner of this year’s Meeting cook 2019.

Come along and be surprised by how tasty and versatile food on leftover raw materials can be with some creativity and ingenuity. The premiere of No waste, Just Taste will take place on April 5 at 19:00.
