Miss Clara reduces unnecessary waste and invests in a vegetarian Christmas table

In December offers Miss Clara with head chef Daniel Guest at the forefront in to a different Christmas table – a four-course tasting menu, served on a plate. For those who avoid meat or want a healthier alternative, a completely vegetarian menu of creative dishes inspired by the classic Christmas food is offered.

The Christmas Tasting Menu is based on the concept “ca30”, presented in December 2016, when Miss Clara, in collaboration with Baileys, launched a 5-course Christmas dinner that took about 30 minutes to eat. Just like last year, this year’s interpretation of Christmas tables turns to those who like to eat traditional delicacies, but want to save on the environment and prefer table dining in front of the buffet.

– I love Christmas tables but want to reduce the waste that often occurs at buffets. The solution became our four course tasting menu, a form of modern Christmas table where we handpicked the best delicacies and serve them as several dishes on a plate, said Daniel Guest, head chef at Miss Clara.

The tasting menu, which is available in both traditional and vegetarian variants, is served in four rounds and is based on the classic Christmas table. The vegetarian menu includes creative and playful variants of the classic dishes, such as vegetarian meatballs of ricotta and chestnut flour or Beetroot tartar with fake eggs and cashew nuts.

– I think the classic Christmas table will continue to look much like it does even in the future, but with a little imagination we can create vegetarian options that are at least as good and Christmassy as the traditional dishes. Our Vegan curry herring of aubergine goes home even with meat and fish eaters, says Daniel Guest.
