Marcus Samuelsson opens a new restaurant at Clarion Hotel Sign

With a greener focus and durability in mind, Marcus Samuelsson opens Kitchen & Table Norrmalm, a new bar and restaurant at Clarion Hotel Sign. Wingårdhs is the architects and a whole new team is recruited to the restaurant.

Kitchen & Table Norrmalm’s restaurant and bar have undergone a total renovation designed by Inside by Wingårdh’s architects during the summer. Recruited as a master chef is Tal Borenshtein, most recently from the F12 group, who comes to Kitchen & Table Norrmalm with extensive experience from international cuisines from, inter alia, Middle East, North and Latin America.

Together with Marcus Samuelsson in the role of Creative Director, the hotel focuses on a greener and more climate smart menu, where nutritional, ecological and sustainability is the foundation of everything.

– Clarion Hotel Sign has since the opening been a special place for me and we have always been at the forefront of sustainability. It is incorporated into our DNA with organic raw materials, a constant endeavor to reduce the food waste and healthy options on our menus. As our audience is increasingly aware of the food’s impact on us and our environment, we want the new generation Kitchen & Table to offer the guest the opportunity to choose healthier options. We are passionate about Green Nudging and it is in the relationship with our local suppliers that development and relocation take place. This is where we get inspiration, says Marcus Samuelsson.

At Kitchen & Table Norrmalm, the guest will meet with a cultural and culinary experience where the flavors are inspired by multicultural Manhattan combined with influences from the Nordic traditional cooking techniques. Modern interpretations of rustic classics where the kitchen treats the earth’s resources with great respect. Urban Garden is called the central part of the menu where crops make up the ground and animal protein is added as a highly taxed accessory.

The interior of the hotel is characterized by Scandinavian design and natural materials, with Kitchen & Tables supporting idea contributing to a playful mix between nature and urban elements. Along with light games, exciting transformations are created that give the hotel and restaurant visitors a dynamic experience.

– Kitchen & Table Norrmalm is a meeting place that offers local and global influences in a wonderful mix. We will activate our bar and restaurant with various events such as DJs, exhibitions and live performances, says Anna Haxne, Food & Beverage Manager, Clarion Hotel Sign.

New is also the bar that takes the position of a “Sustainable Bar” with a clear effort to minimize organic waste. “Zero Waste Bars” is a concept that has gained a major international impact in recent years, where all production is reviewed and analyzed.

Naima Agnaou, Restaurant Manager Kitchen & Table Norrmalm, has established an amazing barteam with Hedda Bruce and Fredrik Löwenhamn in the lead, both closest from Marie Laveau. The ambition is to push Sweden’s bar scene forward through a well-developed and sustainable cocktail list with emphasis on Nordic raw materials.

On August 23, Kitchen & Table Norrmalm opens for dinner, August 28 for lunch and September 9th, the restaurant starts with brunch – both Saturdays and Sundays. The restaurant’s Coffee Shop offers snacks and light food daily.
