Breakfast from a craft bakery

During the summer, stockholmers have traveled to Brunkebergstorg and, above all, the roof park Stockholm Under Stjärnorna. From August opened another reason to visit the popular square in the middle of the town. Blanche & Hierta, the wine and food bar at At Six, launches a breakfast signing its own craft bakery, run by Head Pastry Chef, and former winner of the Year’s Confectioner, Josefine Baummann. On weekdays Blanche & Hierta opens breakfast at 7.30 and on saturdays 09.00.

Like all that At Six does, it’s local ingredients after the season of influences of the world composed in a Scandinavian way. The Crafts Bakery at At Six is ​​run by Head Pastry Chef, and former winner of the Year’s Confectioner, Josefine Baummann.

“I and my team are constantly working on developing our recipes and finding new things just like we have done now with breakfast at Blanche & Hierta. There will be a bit of each, food that suits early mornings, but also for the longer breakfasts, like grilled levainmackor with different toppings or ricotta pancakes. One of the recipes I am most pleased with is still our croissants!” Says Josefine Baummann, Head Pastry Chef at At Six.

So far, the craft bakery has been a major part of hotel guests’ everyday lives, but will also be available to stockholmers with the launch of the breakfast at Blanche & Hierta. Here bakes every morning among other things levain- and rye bread, croissants and a variety of sweet and savory pastries, which will be found at Blanche & Hierta. For those who want a more moderate breakfast there are omelettes, Eggs Benedict and similar, and you can also buy a loaf of bread to take home.

“We have seen how popular outdoor seating at Blanche & Hierta has been during the summer, now we want to continue to develop Brunkebergstorg and a rich breakfast place is really what’s missing, either if you pick up a freshly baked levain and coffee to eat at the office or have a breakfast meeting on the spot, Blanche & Hierta is what will take Brunkebergstorg to the next level,” says Henrik Jakobsen, Director of Food & Beverage at At Six.
